🌠 An evening of insight, discovery and fine wine 🌠

The event "Explore the Changing World of Wine: A Climate-Focused Tasting," on 14 March 2025, brought together wine lovers for an atypical wine tasting.

Besides enjoying a tutored tasting of six carefully selected wines (including organic, sustainable and biodynamic wines) by certified sommelier Xavier Ligot, Xavier also shared insights on

➡️ the wine industry's environmental footprint,

➡️ climate change's effects (such as increased frequency of extreme weather events) on vineyards and wine industry, and

➡️ Wine industry adaptation to climate change such as

🔸 shifting vineyard location,

🔸 adjusting grape variety

🔸 innovative vineyard management techniques

🔸 harvest and production adjustments

🔸 use of technology and innovation: Precision Viticulture

🔸 genetic research and breeding

🔸 sustainability practices and reducing carbon footprint

🔸 research and collaboration

The event ended with a climax as Xavier Ligot surprised the attendees with an additional tasting of ✨ Mare Santo ✨ - a one of a kind sparkling wine, made from Rebola grapes, first spoilt by the sun, and then aged by the patented sea aging method.
